What does that even meannnn?

Let’s start by saying that this platter of street cart fries is taking notes from Greek salad and loaded nachos and late-night chili cheese fries and making it all come together in a happy and delicious moment for fry lovers everywhere.

To me, these specific street cart fries mean sweet potato fries (or regular! your choice, pal) topped with fresh summery romaine, marinated tomatoes and chickpeas, feta cheese, herbs to the nines, a quick thrown together tzatziki, and fried pita strips as the crown jewel on top, all coming together in one epic bowl-meets-boat-type meatless dinner situation. You could also add kalamata olives and/or pepperoncini, and you would be, oh I dunno, THE BEST PERSON EVER, and I would know that we are destined to be food BFFs.

I first caught the vision for these when I ate at my latest lunch obsession hot spot: Spitz. The number of times Jenna and I have ordered the wraps to be delivered to the studio for lunch is very incriminating and shall not be made public. So let’s just say I have ordered this (street cart fries and all its variations) enough to know that I needed to at least TRY to make this happen at home.

First order of business was seeing how difficult it would be to make gyro-style meat at home, because YUM. That meat is so good.

Second order of business was realizing that making gyro-style meat at home was way too complicated for my regular girl self. So I settled on an equally delicious meatless version of my favorite salad/fries combo from Spitz called the Street Cart Fries. And yes, I live the kind of life where “Street Cart Fries” are fully accepted as a salad. Whatcha gon do bout it.

Third order of business was figuring out the most important ingredients I needed to recreate this wonder.

And they are, in order of importance:

Sweet Potato Fries. Worth noting that we also adore regular non-sweet-potato fries. This is u-pick moment.

Tzatziki. Necessary, because it’s kind of the chili cheese sauce in our chili cheese fries analogy. Without it, there’s no saucy thing on the fries to hold it all together. It’s quick to whip up and it’s delicious beyond all belief. HIGHLY RECOMMEND dipping some fried pitas in this stuff before you even touch the salad/fries creation.

Speaking of.

Fried Pita. Friends, this is not truly necessary in the way the tzatziki is necessary, and it does require a little extra time, so if you are tight for time, take a pass this time. But if you are not tight for time and you love OMG-type-food, then you need – I repeat – NEED – fried pita strips atop your fries. I do not lie about these important things.

And guess what? The rest is sort of a buffet of options.

Marinated tomatoes and chickpeas and feta cheese and pepperonicini and more herbs are kind of what I most recommend as the final layering touches, but it’s your call. She is a blank-slate-meal kind of girl. You make it your very own street fries masterpiece, okay? I fully expect to be tagged in your amazing fry pictures on Insta.

French Fry / Salad / Nacho Boats? Absolutely. Yes. For the win. Love you guys.

Loaded Mediterranean Street Fries
Author: Pinch of Yum
Serves: 4 servings
 

Ingredients
Tzatziki
  • 1 cup plain full fat yogurt
  • half of a zucchini, grated
  • ½ cup roughly chopped fresh parsley
  • 1 clove garlic, minced
  • a few pinches of chopped fresh dill
  • salt and lemon juice to taste
Marinated Tomatoes and Chickpeas
  • 1 can chickpeas, rinsed and drained
  • 4-6 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • fresh minced parsley to taste
  • salt and lemon juice to taste
Other Ingredients:
  • 1 bag sweet potato fries
  • 1 head romaine lettuce, washed and roughy chopped
  • pita bread and oil for frying

Instructions
  1. TZATZIKI: Combine the tzatziki ingredients together – taste and adjust until it hits the spot for you.
  2. TOMATOES / CHICKPEAS: Toss the chickpeas and tomatoes together with the oil, garlic, lemon juice, and parsley to marinate.
  3. SWEET POTATOES: Bake the sweet potato fries according to package directions. While the sweet potatoes are baking, chop the lettuce and fry the pitas.
  4. PITAS: For the pitas, cut each one into strips and fry in a shallow layer of frying oil (such as vegetable oil) until golden brown and slightly crispy. Drain on paper towels and sprinkle with salt.
  5. ASSEMBLY: Assemble the individual boats with layers of fries, tzatziki, marinated tomatoes and chickpeas, fried pita, romaine, feta cheese, and more. Mwah!

Notes
Highly recommend the addition of feta cheese, pepperoncini, olives, hot peppers, hot sauce, and/or anything else you love! Make this one all your own.

In my mind, a nice classic PASTA SALAD serves one of two scenarios:

  • Attending a picnic, potluck, or other end-of-summer-everyone-bring-something type party;
  • Addressing the leftover meat, cheese, and vegetables in my fridge by tossing them together into a big bowl with cold pasta and dressing for dinner. Preferably a summer dinner. Or a summer midnight snack. I mean, was there ever really a better midnight snack than cold pasta salad?

That’s it. These are the only places pasta salad exists in my life.

But they are good and important places, especially that first one about the summer events that require a contribution to a community food table, and especially considering that here we are, at the end of summer! Wow. Time to cry into my pasta salad. How is already the end of summer?

Okay. Let’s clear some things up here. I live in Minnesota, home of the church basement potluck and “salads” made from jello and whipped cream and Snickers bars. I AM ZERO PERCENT KIDDING. I grew up on salads made from candy bars and fake dairy and loved every blessed second of it.

So when I think of pasta salad, even if the first image in my mind is some mayo-loaded retro bomb of deliciousness, I try to guide my mind to a vision of pasta salad that is more elevated. Pinkies-out style. You know, more classic and less mayo-y. A tiny bit retro, maybe, yes, just by default of being a “pasta salad” in our great state of Minnesota, but also something fresh and classic. Not modern – let’s not get too ambitious here. Just a quality classic pasta salad situation that you can be proud to bring to the party.

We’re going to need:

Good, spicy salami. Yummy cheeses. Tomatoes or some other very friendly non-threatening vegetable. Greens of some sort – even if it’s just fresh parsley. Good enough, friends. Good enough. Olives and red onions and a tangy Italian dressing. That you made. That’s right. You made that Italian dressing, you little pasta salad boss, you. ♡

Also, possibly the most important: we need pasta with good solid texture and shape to absorb all the sauce. (DeLallo! It’s our favorite. The semi-rough texture is unrivaled. I get mine at Target or Cub Foods.)

These days I am thoroughly enjoying my pasta salad with WHOLE WHEAT pasta. Nobody even has to know, guys. This can be our pasta secret. It’s so chewy and delicious, and with the ridges on the outside of that penne? Ugh. It’s almost too basic to be good. ALMOST.

This is a face plant moment just waiting to happen.

May I offer one last tidbit of advice? You do not need to wait to be invited to a picnic or potluck to get some pasta salad magic in your life.

This is a weeknight’s dream meal.

Stop at the store on the way home and pick up some good salami and cheese, some olives, and a few fresh herbs. Cook up some pasta, toss it all together, and voila. Cold pasta salad + a glass of rose for dinner, and colder pasta salad as leftovers for lunch all week. I will be over in a flash.

Best Easy Italian Pasta Salad
Author: Pinch of Yum
Prep time:  30 mins
Total time:  30 mins

Serves: 10+ – this yields more than 15 cups (!!)
 

Ingredients
  • 1 lb. pasta such as fusilli, penne, or rotini (we use DeLallo whole wheat pasta! so yum.)
  • 8 ounces fresh mozzarella cheese balls, cut in half
  • 1 lb. summer sausage or salami, cut into chunks
  • 3 cups cherry tomatoes, cut in half
  • ¾ cup black olives, sliced
  • ¼ cup minced fresh parsley
  • sliced red onion, crumbled feta cheese, pepperoncini (optional)
  • 1½ cups Italian dressing (see notes)

Instructions
  1. Cook pasta according to package directions. Allow to cool slightly (and maybe toss with a little oil to prevent sticking).
  2. Toss all ingredients together! TOLD YOU IT WAS SO EASY. 🙂
  3. Keep in the fridge for 2-3 days. I think it actually tastes best the day AFTER you make it.

Notes
If you want to make your own Italian dressing:

3/4 cup olive oil
2 tablespoons white vinegar (white vinegar or red wine vinegar work)
2 tablespoons water
1 tablespoons coarse sea salt
1-2 teaspoons sugar
1 teaspoon dry oregano
1 teaspoon dry basil
1 clove garlic
black pepper to taste

Whisk or run through the blender to make a creamy, slightly thickened dressing.
