Skinnytaste Dinner Plan Week 34.  I’m in Boston this weekend with some blogger friends, what a great city! Great people, great food and we are having perfect weather. Now it’s time to get ready for BBQ’s, beaches and fireworks!

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Please tell me you guys eat, love, and are generally familiar with Lo Mein.

Maybe you are a Panda Buffet regular and you not only know Lo Mein, but the people at Panda know YOU when you walk in the door and they waste no time piling high your little plastic tray with scoop after scoop of those stir fried noodles while you watch a little protectively from the other side of the glass, because couldn’t they have given you a bigger scoop like they did last time? come on puhleeeease.

or maybe you mostly know Lo Mein from your growing up days because good news, kids! mom and dad are ordering Chinese takeout tonight (yasssss) and little pre-teen you is most definitely going to eat your weight in salty Asian noodles and then revisit it in the fridge, cold, right before bed, amiright?

Or maybe you’ve never had Lo Mein and you’re giving the rest of us all the look right now. I hear you, sitting high up there, saying that you would never eat cold takeout noodles right before bed. There is judgement in your heart. You think you’re not into this whole stir fried noodles and vegetables thing. In which case:

It’s time for you to get Lo Mein in your life, friends. This is your big day. We’ve all been waiting for you. Welcome to your Lo Mein intervention!

Honestly, WHO EVEN KNEW how easy it could be to make Lo Mein at home? And as a follow up to those of you who did already know, WHY DIDN’T YOU EVEN TELL ME?

Until two weeks ago, I always just assumed that this was some kind of lengthy process involving mysteriously delicious ingredients that I wouldn’t have in my standard Midwestern kitchen, and plus, did you know that you can get a platter of Lo Mein large enough to feed the neighborhood for just $6.50 at the Panda Buffet? So why would we even do this at home? I’m serious – let’s go.

Except hold the phone for just a sec.

  1. Making Lo Mein is not a lengthy process – it’s going to come together in ONE PAN in something like 15 minutes, start to finish. JOY of JOYS. I seriously had no idea when I set out to learn about all things Lo Mein that it would be such a gem of a quick + easy recipe, and not in the way where you’re skimping on anything. Just by nature, it is that simple.
  2. Lo Mein doesn’t require fancy or unusual ingredients. Like, at all. A quality soy sauce and sesame oil combo is basically it. That’s your Lo Mein magic right there. For real – just one bottle of good soy sauce and you’re in Lo Mein business. I mean, almost everyone, no matter what their cooking level is, has a bottle of soy sauce in their fridge, right? or at the very least, a few PACKETS of soy sauce from leftover takeout? You know I see you out there.
  3. And finally, Lo Mein is awesome as takeout, but it’s more awesome as a mostly-healthy takeout at home dish that can simultaneously clean out the fridge by using up any and all veggies and proteins that a person could ever want in their silky stir-fried noodles. The happiness I feel for this concept… like wows. You do not even know. Recipe scrappiness fulfills a piece of my soul.

Things to Know About Lo Mein

You can use almost any vegetables and/or protein.

Ideas: Red pepper, carrots, spinach, bok choy, mushrooms, snap peas, onions, cabbage, broccoli. // Chicken, shrimp, eggs, beef, pork, tofu.

Game on.

Also.

You need a good soy sauce, and I HIGHLY recommend the 2-types-of-soy-sauce trick. It’s not really a trick as much as it is a tiny thing that makes a big difference. It’s probably more likely that you have light or low sodium soy sauce in your fridge, but tip alert: dark soy sauce is so rich in umami flavor and it takes this Lo Mein “sauce” situation to a whole new level.

Because the quality of soy sauce is important here (I mean, it’s one of literally THREE ingredients that will make the sauce for your stir fried noodles), I did not use soy sauce packets from leftover takeout.

I used this light soy sauce // dark soy sauce combo. (<– links for products on Amazon).

This two soy-sauce combo is the best way for Lo Mein, and Pearl River Bridge is the cream of the crop. It is a naturally brewed premier Chinese brand of soy sauce, and thanks to the internet, you can have it at your house in a snap like a two-day-delivery pro.

Shake that up in a jar with a quick hit of sesame oil and a pinch of sugar. annnnd DONE.

Then there’s the noodles.

You could use Lo Mein specific noodles if you can find it fresh or frozen at your grocery store. I could not find it at any of my regular places, so in its place I have used either dry ramen if you can find it (as long as you’re hitting up Amazon for the soy sauce, grab a box of this ramen, too) and/or just regular spaghetti.

…Is that blasphemy to Lo Mein? to use spaghetti?

I don’t know, I’m thinking we both care more about practicality than total and complete authenticity.

Go on and do what you need to do.

And in a quick flash of the pan, with the sauce and the noodles and the veggies all partying it up in there, we’ve reached the tippy top of the Lo Mein journey. The part where you wind those silky noodles up on a fork with a few pieces of caramelized pan-fried veggies and treat yourself right.

Easy Homemade Lo Mein, comin in hot!

15 MINUTE LO MEIN VIDEO:

15 Minute Lo Mein
Author: Pinch of Yum
Serves: 4
 

Ingredients
Sauce:
Lo Mein:
  • 4-6 ounces uncooked ramen noodles
  • 1 tablespoon sesame oil
  • 3 green onions, chopped (separate green parts from white parts – you’ll use both separately)
  • 2-3 cups julienne cut or chopped vegetables like carrots, red peppers, cabbage, bok choy, mushrooms, or broccoli
  • 1-2 tablespoons mirin

Instructions
  1. Sauce: Shake all the sauce ingredients together in a jar.
  2. Noodles: Cook the noodles according to package directions. Drain and set aside.
  3. Lo Mein: Heat the sesame oil in a large wok or skillet. Add the green onions (white parts) and vegetables to the hot pan. Stir fry until fork-tender, about 5 minutes. Add the mirin to loosen the browned bits up off the bottom of the pan. Add the cooked noodles and about half of the sauce – toss around in the hot pan to combine. Add more sauce if needed (I usually gauge the amount of sauce I want by the color of the noodles – you want a medium brown color, not too light, not too dark). Serve topped with remaining green onions!

Notes
If you want to add a protein, stir fry it first, before the vegetables, then remove from heat while you cook the vegetables. Add back into the pan at the end with the noodles.

7 Tasty Juice Recipes for Weight Loss

Weight Loss Juice Recipes

I have been trying to lose weight again, goodness knows I have tried so many times before, but I have found that these fruity and invigorating juicing recipes for weight loss are just brilliant and the results are absolutely fabulous too! I feel energised, my skin, hair, and nails are glowing and I am getting lots of compliments on how great I look.

My favorite recipe definitely has to the be Strawberry Green Blast, here is the recipe (feel free to share it with your friends);

Strawberry Green Blast

Ingredients

2 cups of any leafy greens of your choice, (I use Spinach, kale, spring greens)

1 Banana (peeled)

2 Tablespoons of Flax seeds

1 cup of frozen Strawberries

1.5 cups of chilled Coconut water (fresh would be best)

Method

Place all the ingredients into your juicer or blender and blast until smooth!

Top Tip: The Flax seeds are an amazing source of micronutrients, dietary fiber, manganese, vitamin B1, and the essential omega-3, so not only does this taste great, it is also really nutritious too. I serve this lovely weight loss juice in a tall glass over ice and garnished with slices of fresh strawberry.


Here are some more of my favourite juice recipes for weight loss, along with some of my secret top tips to help boost your weight loss.

Pound Away The Pounds Tonic

Ingredients

1 Cup Spinach

1 Large Tomato

½ Stalk Celery

½ Carrot

½ Red Pepper

¼ Small Onions

¼ Limes

2 Sprigs Coriander

1 ½ Cups Water

Method

Place all of the ingredients into your juicer or blender and extract for only 40 seconds for a super smooth, very delicious, top tonic to easily help your weight loss. I serve this in a tall straight glass with stalk of celery to stir, dip or crunch.

Top Tip; This one is a great meal substitution, great to make in advance and take with you on the go, or for after the gym!


The Feel Better, Look Great Green Shake

This shake is alkalinizing, low-glycemic and packed with vitamins and antioxidants to keep your energy up, your skin glowing and your immune system fully charged.

Ingredients

1.5 Cups of Water or Almond Milk

I Grapefruit (Peeled)

1 pinch of Sweetener (Stevia or similar)

1 teaspoon of Cinnamon

1 tablespoon of grated Fresh ginger

1 bunch of kale or Spinach (washed and chopped)

1 cup of chopped green apple

½ Cucumber

1 cup of Ice or ½ a frozen banana

Method

Blend together water and grapefruit, and then add your choice of sweetener, cinnamon, and ginger. Then add Kale one handful at a time until it has all been well incorporated. Add the chopped apple, cucumber, and ice and then blend until smooth and creamy. I like to serve this in a hurricane style glass, which makes it a great weight loss mocktail.

Top Tip; The addition of Cinnamon to this recipe is great as it is a known weight loss booster for helping to speed up your metabolism. Ginger can help burn off some of the fat stored up in the body as it is also known to help speed up your metabolism.


Another great recipe that I really enjoy and is a great, quick and easy juicing recipe for weight loss, is the Turmeric Tonic…

Turmeric Tonic

Ingredients

2 Persimmons Fruit

2 lemons (peeled)

1 (3”) piece of fresh Turmeric Root

Method

Process all the ingredients through a juicer and as water as needed to get the consistency you like, and enjoy immediately for optimal health benefits. When serving this I’d suggest a short tumbler style glass, with plenty of ice and a lemon wedge to garnish.

Top Tip; Turmeric is the new revelation in weight loss and is known to “Turn to Bad Fat good”! The consumption of just the right amount of turmeric (2-3grams daily) can slow down the increase of belly fat.


Slimming Citrus Blast

Ingredients

2 Handfuls Spinach

¼   Grapefruit

1   Orange

3   Strawberries

¼ Cup Raspberries

1-Tablespoon Chia Seeds

1 ½ Cups Water

Method

This is a super quick 30-second blast in your juicer and it’s ready to enjoy!

Top Tip: I would suggest you make sure you include low glycemic fruits like strawberries and grapefruit, along with plenty of dark leafy greens! Chia seeds are great weight loss benefits as they absorb water and so can help you feel full up longer, as well as being fabulously nutritious.


Pomegranate Pizazz

1 Medium Apple

1 Cucumber

½ Lemon

1 large Orange

1 Cup of Pomegranate

Method

Process all ingredients in a juicer, shake or stir and serve.

Top Tip: Adding lemon juice to a beverage can help increase weight loss. I’ve also included the superfruit Pomegranate as it has loads of great health and weight loss benefits. Pomegranates block triglycerides, the fat that is bad for your blood. This means the fruit attacks the fat before it can even be stored in your body.


Sweet Curb Appetite Juice

1 large sweet potato

2-3 carrots

1 orange

1/4 pineapple (about 1 cup chopped pineapples)

Optional: squeeze half a lemon in!

Method

This is such a simple recipe! Peel the sweet potato, and put it into your juicer/blender along with the carrots, orange and pineapple (plus lemon for an added weight loss boost) and blitz until smooth. Can be served in a fresh pineapple shell for a lovely tropical treat.

Top Tip: This juice recipe for weight loss will help reduce your appetite. If you have a sweet craving, especially late at night, make yourself a sweet juice instead of reaching for the sweets, treats or biscuit bars.


Pink Smoothie

Nutritious and satisfying, this smoothie is high in vitamin C. The combo of apple and natural yogurt are great for the digestive tract.

2 oranges
1 apple
1 cup of raspberries (fresh or frozen)
1 cup of strawberries (fresh or frozen)
1/2 cup of natural live yogurt

Method

Firstly juice the oranges and the apple, and then add the blended juice to a blender with the rest of the ingredients. This delicious and refreshing juice is best served immediately, perhaps in a hi-ball style glass and garnished with swirl of yogurt.

Top Tip: Natural yogurt has many health benefits; it contains lots of good for you bacteria and is packed full of vitamins. When you eat yogurt, the calcium signals your fat cells to pump out less cortisol, making it easier for you to drop pounds, while the amino acids help burn fat.
